Onion cream soup


2 medium onions, 2 garlic cloves, 1 carrot, 350 ml vegetable stock,1 kohlrabi (I will put a picture at the end of the article), a small amount of olive oil or any type of oil, salt, pepper and parsley for the plating.

I like to serve this with 2 loaves of bread and cheese. Put some grated cheese over the bread and leave it in the oven until the cheese melts. If you don’t want cheese, just make some toast.

How to :

The recipe is really simple. You cut julienne all the vegetables, add some olive oil in the soup pot, the heat must be on medium to small and add the vegetables.

They have to simmer for around 30 minutes, until they become translucent. During this time you have to stir from time to time, in order to avoid burning them, especially in the beginning.

After they become translucent, add the stock and put the lid on. Let it boil until the carrots are cooked.

The last step is to let it cool off and then put it in the food processor until you have a
cream soup. Put some chopped parsley and see the results below. Bon Appetit!
